Crab Cakes

Chef Mike’s original recipe

Ingredients:
2 cups crab meat
1 egg
2 heaping tbs mayonnaise
1 tsp Dijon mustard
Hot sauce to taste
1/4 cup celery
1/4 cup red pepper
1 clove garlic finely chopped
1/2 tsp lemon zest 1/2 cup Panko
Fresh ground black pepper to taste.

Directions:
Mix ingredients into a bowl then form into small patties
Pace each patty into a bowl of Panko to coat each side
Lightly fry in olive oil coated non stick pan
Serve with ranch dressing and a lemon wedge.
